DESCRIPTION:**Must have CDC Michelin experience to be considered
for this role**Award-winning, Michelin Star restaurant featuring
Modern Mexican cuisine is seeking an experienced Chef de Cuisine to
join this dynamic team. Our Southern California kitchen located on
the coast in Oceanside draws on the culinary traditions of Northern
Mexico, while highlighting the bounty of local farms and sea food,
to create a bold cuisine paired with a wide selection of Mexican
wines. Our restaurant delivers an unforgettable dining experience
with a spectacular ocean view.RESPONSIBILITIES:The Chef de Cuisine
will assist the Executive Chef with menu development, training,
coaching and managing the culinary team. The Chef de Cuisine
provides a quality product that is timely, fresh and meets quantity
needs of the restaurant while working directly with the Executive
Chef to maintain and improve the culinary operation. The CDC
focuses on daily service for the restaurant and ensuring all guest
experiences are memorable and consistent. Skills and knowledge
include precision plating techniques with high quality ingredients,
communication skills, training skills, computer skills,
organizational skills, guest contact and staff management
knowledge. Experience with Michelin standards and Authentic Mexican
cuisine is highly preferred.QUALIFICATIONS:
--- Minimum of 2-3 years' experience in a CDC or equivalent
management role in a fine dining restaurant (Michelin experience
required)

beverage
--- Highly organized and self-motivated, with the ability to manage
multiple priorities under time constraints
--- Ability to listen, communicate, and make connections

--- Basic math and computer skills
--- Punctual and reliable
--- Ability to speak and hear, see, distance vision, color vision,
peripheral vision, depth perception, and the ability to adjust
focus
--- Be able to work in a standing position for long periods of
time
--- Be able to reach, bend, stoop, kneel, push, pull, climb
stairs/ladders, and frequently lift up to 50 pounds
--- Continual use of manual dexterity and gross motor skills with
frequent use of bi-manual dexterity and fine motor skills.
--- The ability to read, write, and speak English fluently
--- Knowledge of kitchen hygiene and practices an occupational
health and safety standards
--- Must be available for weekend and holiday shifts. Restaurant is
open Wednesday - Sunday, 5pm-9pm.SALARY & BENEFITS:Competitive Base
